Brinjal Bharta / Badanekayi Bharta / Vangi Bharta

Brinjal bharta is a delicious side dish goes well with jawari rotis or chapatis. Any  variety of large or medium sized brinjal can be used to make this dish. I bought 2 deep purple  brinjal weighing 250 grams each from the vegetable market. Out of them I used one brinjal  for making brinjal  bharta and another one is used to make brinjal salad.  It was delicious and we enjoyed it. The following ingredients  serve brinjal bharta for 2 persons.
Ingredients :
1 large sized brinjal / eggplant
1 large sized onion, finely chopped
1  tsp chilli powder
½  tsp garam masala
¼"  ginger, finely chopped
2  flakes garlic, finely chopped
 ¼  tsp amchur powder
½  tsp turmeric powder
¼  cup grated coconut
¼  cup chopped coriander leaves
3 tsp oil
Salt to taste
 Method :
Wash, wipe and apply little oil over the brinjal and roast it over the high flame as shown in the picture below.  Roast it properly from all sides. Remove it from the flame, cover a lid and allow it to cool. Peel the brinjal and keep it aside
Heat 3 tsp oil in a pan. Add onions and fry till they become soft. Add ginger and garlic and fry till raw smell goes. Add chilli powder and fry for a few seconds. Add amchur powder, garam masala and turmeric powder. Fry till the oil separates.
Remove the fried onion mixture on a plate as shown in the picture below.
Add the mashed brinjal, coconut and salt. Mix well.
Heat a pan on a low flame and add the brinjal mixture in the pan. Stir fry them for 2-3 minutes.
Remove from the flame. Add chopped coriander leaves and mix gently. 
Serve hot. Tastes great with jawari rotis / chapatis
